Try to get lucky and land a critical hit or something. Close Combat for STAB and power, the other moves compliment the item.

-Thunder Wave / Will-o-Wisp
-Psycho Cut / Night Slash
-Close Combat / Night Slash

Use Hypnosis first. Opponent would assume that that's its only status move, so he/she may switch to another Pokemon to counter it. Use Thunder Wave or Will-o-Wisp then (which should be right after you use Hypnosis). After that, just try to sweep.


EVs:

With base 80 speed, there isn't much that Gallade can outrun. You could go for the full 252 Spd and attempt to outrun any Metagross with max speed EVs, but they don't appear too often. Max Attack and put some in HP and SDef if you don't think you need the speed EVs.

On the second set, I'd go with Close Combat 100% of the time. Second damaging move depends, Psycho Cut for secondary STAB, Night Slash for better coverage.

Also, I really like Thunderpunch on Gallade, as Gyarados is one of the more common switch-ins ( predicting an Close Combat ).

Yeah, the Punches aren't a bad idea if you have Emerald. And I think you should at least mention Stone Edge in the Critical hit Moveset.
Shadow Sneak can surprise Alakazams or Gengars and can do something against faster weakened Pokémon.
