Doing some random Pokémon, I'm picking the ones people don't know a lot about. You can also do the same!

Base stats:
65 HP / 76 Atk / 84 Def / 54 S.atk / 96 S.def / 105 Speed

Only Speed and S.def shines. But this can be a scary Pokémon even with all that cuteness.

Sets:

EVs: 252 HP, 26 S.def, 232 Speed.

I bet you never saw an item list that big! They all have their purpose. The choice items for Pokémon that aren't going to use it well, beware of mixed sweppers if you choose them. You can give Choice Band for things like Blissey, Starmie, Porygon2 or -Z, etc. Choice Specs for Garchomp, Snorlax, Skarmory, Rhyperior, Electivire, etc. Choie Scarf if your team is slow or has a Trick Room Pokémon. Lagging tail for any fast Pokémon, most notably Gyarados, Jolteon, Crobat or anything with a speed boost. Iron Ball for the same purposes, but this is only useful if you have a spiker, if not then prefer Lagging Tail. Flame Orb will cut the attack of anything that appears in front of you. Tyranitar, Metagross, Regirock will hate these, especially the last two who are immune to Charm. If you're using Flame Orb, beware of Pokémon with Guts ability. Black Sludge will do Sandstorm damage in non Poison opponents. kinda effective, but not as much as Sticky Barb, does more damage than Black Sludge, but you can get this item for you if you hit opponent with a touching attack. You'll see Blissey, bulky waters, Skarmory are a lot easier to KO when they are holding these last two items! EVs to outspeed Garchomp. Charm+Mirror Coat works effectively. With full HP and without +S.def nature Lopunny can resist any Salamence's Draco Meteor (without Choice Specs) and then Mirror Coat back! Last move is up to you. Toxic annoys but is blocked by things with Rest and can activate Guts. Ice Punch for Garchomp. Fire Punch for Forretress, Skarmory and Bronzong. Thunder Punch for Gyarados or Skarmory. They all won't OHKO but will do a nice damage.

Item: Choice Band
Nature: Jolly
EVs: 26 HP, 252 Attack, 232 Speed.

Give Cute Charm and you can use items now, and still Switcheroo has some uses. Ice Punch only for Pokémon 4x weak to it, otherwise, Return does more damage if it does neutral damage. the fighting move is your choice, Skyuppercut and Jump Kick both have the same power, but one will miss more (Skyuppercut - 90%) and the other can hurt you if you miss (Jump Kick - 95%). Focus Punch to use if you think opponent is switching. This will hurt a lot things like Tyranitar and Blissey. Return is your main attack. Use Switcheroo when it's about to lose (In a Pokémon that's NOT physical oriented). The speed will help you to set up this better. You can Switcheroo items even at full health, but do this only if you see you'll have a hard time to beat that Pokémon.
From now, movesets will get weaker, but curious.

EVs: 26 HP, 252 S.Attack, 232 Speed.

Lopunny learns a lot of special attacks, but it doesn't have S.atk enough to make this usable. Having 227 as the highest S.atk is not good, but it can do a few things if you're using Fake Tears. REALLY not recomended, but can surprise.

Ability: Cute Charm
Item: Leftovers
Nature: Calm
EVs: 252 HP, 252 Defense, 6 S.def

Not complex. You can give it more S.def or Speed.

Other Options:
I covered the main ones, Encore can be used to annoy stuff. Encoring Gyarados' Dragon Dance and switch to an electric Pokémon is good, just beware if you get Encore with 2 turns. and Lopunny can Fling Iron Ball (with Klutz) giving you a strong Dark attack.

Opinion:
Lopunny is one of those Pokémon opponent must keep guessing. It can do many things well. Lopunny won't help you in offensive a lot, but it can make at least one Pokémon very easy to KO.

Counters:
They can vary a lot depending on the moveset or the item you're holding. Infernape is the main one, it can have speed enough to be faster and Close Combat really destroys the bunny. Metagross can get any attacks the Choice Band version has and trow Meteor Mash against it. And doesn't mind get Lopunny's Choice Band, Metagross is also immune to Charm.

Pokémon to use with it:
Togekiss/Vaporeon:
Lopunny can disable opponent's Leftovers, but it can't use Leftovers if it has Klutz. Wish support will help Lopunny a lot.

Foretress:
I said Fortress but you can use any Rapid Spinner. Lopunny WILL make you switch a lot. When you have no Spikes/Stealth Rock, then your team is safer.

Lopunny can work well in many teams, just need to avoid common weakness to fight, so I can also recommned a Ghost Pokémon. Dusknoir and Gengar are the main ones.
